COMING SOON TO A NEIGHBORHOOD NEAR YOU ... 1930'S REVISITED

 86% of those polled say they are concerned about INFLATION ... I think that part of the issue is the inflation numbers as they are being reported.

The US Government has reported that inflation has only gone up about 5-6% in the past year ... but everyday people - those outside of government - have seen the prices climb and climb.  Although, they have admitted that Meat/Poultry/Eggs have gone up the quickest.

This is the highest prices have gone up in 20 years -- yup, that would be the year of 9/11 ... and we didn't mind paying a LITTLE more back then.

In the past year, I have seen 80/20 burger go from $1.99/lb on sale to $3.50 on SALE ... yup - it has nearly doubled in price!  And that is at the local "big box" grocery store where the majority of people would shop.

Milk, cheese, rice, veggies ... they've all taken a similar jump -- the only thing that hasn't take as large as a jump is dry beans.

Dry beans are not a huge part of American cuisine - unless they are refried or in chili very few people even eat beans, and even then they are either already smashed in the can for them or are a dump&go type of variety - few people even know that the beans were once dried.

FNC had a news report on, which was buried 42 minutes into the show, in which they reported one woman said she paid $4.09 for 18-eggs 2 weeks ago, this week she paid $4.49!  That may not sound like much, until your realize that it jumped 10% in only 2 weeks.

A retail executive, Bill Simon (former CEO of Walmart)  says that once the government either ends the pandemic payouts or they simply run out of money, people will not be able to pay for food like they could before.

I'm thinking we will likely be eating a LOT of soup, dried beans, rice, potatoes, etc.  Its going to be like 1976 again when the elderly ate canned dog or cat food because it was cheaper than anything they sold for people ... if not worse - the only reason we survived the last big inflation spike was because there were still enough survivors from the Great Depression to help us out!!

I tend to save receipts - I keep an eye on sales ... Last week was an eye opener when I saw chicken on sale for 3$ cents/pound sold in 10# bags, limit of 4 ... my youngest came up the last day of the coupon - she couldn't find hardly ANY meat of any sort in the store that was on sale. 

What would I do with 40# of meat you might ask? why I CAN it up! I do not want to be caught with an empty pantry just because of this.

These last 2 weeks I have not had to buy much in the way of food, although I did have a pork loin and chicken tenderloins on my list last week.  The Pork Loin I cut myself into pork chops to the thickness I prefer ... the chicken tenderloins sit best on my youngest daughter's tunny.

I suggest you start looking for recipes and making then NOW for foods eaten during the Great Depression.  This may not be that bad, but we don't know what's going to happen next.  If you aren't used to eating soup or rice dishes or dried bean foods, your body will need time to get used to it.
