Recipe: GOOD EATS, French Onion soup

I don't know about all this alcohol that he uses ... I mean he doesn't let that cognac cook long enough to evap the "proof" ... I would think that after a bowl you'd be feeling a bit tipsy!

Must be why he says that the goal is to get a bite of bread with a bite of soup -- you need the carbs to cut the effects of the alcohol and the grease from the cheese to help coat the lining of the stomach and slow alcohol absorbsion ... but its just a theory.

I'd rather just use beef broth myself.
